Mountain Meatloaf

5 lbs. Ground Meat (1/3 veal, pork, and beef)
1 c. Bread crumbs
3 eggs
2 c. Freshies Original Bloody Mary Mix
4 Bay leaves, crumbled (optional) 2 Tbsp. Dried thyme leaves, crumbled
½ c. Parsley, chopped
2 Onions, minced
Salt and pepper to taste
Uncooked bacon strips
Preheat oven to 325 degrees.
Mix liquid ingredients and herbs; add bread crumbs; add meat.
Place in 2 loaf pans, or hand shape.
Lay bacon strips on top.
Bake for 1 hour and 15 minutes.
Drain fat and serve. Or serve cold; invert loaf, and serve with cornichons for garnish, with Dijon mustard and horseradish/sour cream.
